Provence has seen only few changes over the last 10 years. And since the recent change of ownership of the restaurant by Chef Baptist Knaven you'll still find all of your classic favorites such as the beautiful Sole Meuniere and Whole Fish baked in Rock Salt, as well as the Onion Soup and Lobster Bisque on the menu.
Chef Baptist came to the United States about 10 years ago and has earned his accolades in the U.S. at his very successful Mediterranean restaurant 'Cafe Zito' on the North Carolina coast, until he moved to the Triangle and started working at Provence. Working with Felix Roux, a Provence, France native, gave him the edge in classic French cuisine and that is what his menu is based on.
