The restaurant uses only the best farmers, artisans, fishmongers, cheese makers, mycologists and oenologists; many, if not most, of these providers are located right here in Indiana. In fact, some things on the menu may have traveled less distance to get to the restaurant than its patrons! Unique ingredients are used in unexpected ways, but the menu also features what's best and most familiar in the land around Indiana-from vegetables to lamb to cheese to tree sap.
