Chef Michael Paley has created a menu that features modern American food with Tuscan influences. Adopting the Tuscan mindset of cooking & use of local, fresh ingredients it will showcase the agricultural bounty of the Ohio River Valley with dishes such as handmade Cavatelli with Bison Bolognese & Sage Rubbed Pork Tenderloin with Collards & Pancetta. Proof on Main will also celebrate artisanal products & sustainable farming.
