Chef/Owner Paul Fehribach scours local farmers' markets in search of the most pristine seasonal produce for his creations rooted in the cooking of the South Coast: Low Country, Creole, and Cajun cuisines that were inspired themselves by the best produce the seasons have to offer. Big Jones uses exclusively pasture-raised poultry, pork, and dairy products, requiring all animals to be raised humanely in open air with sunshine and green grass. All beef is 100% grass fed, for incomparable flavor. Fresh seafood is flown in daily, as are certified organic true hominy grits, and pure Louisiana popcorn rice.
