Located at San Diego's newest luxury resort, Amaya serves Mediterranean-inspired cuisine in a relaxed yet elegant setting. Executive Chef Jason McLeod and Restaurant Chef Camron Woods present enticing entrees, such as Seared Snapper with Eggplant Caponata, Sunchoke Puree and Blood Orange Sauce; Colorado Lamb Rack with Spinach Spanakopita and Sweet Garlic Jus; and Lobster Pappardelle with Tarragon and Parmesan.
