MY REVIEW: The 1st time I had a sliced brisket sandwhich which was ok, but not as tender as I like. A friend bragged on his chopped beef, however.
The second trip I ordered a half pound each of pork ribs, chopped beef and brisket (from the lean end).
Brisket (sliced) doesn't have that fall apart texture that I prefer. Like the sandwich a couple days previous, it was not necessarily tough (a little chewy maybe), just not really tender. It did have a nice crust & smoke ring, but to compare this brisket to anything you'd get in Lockhart is ridiculos.
What Bolton's has that does compare favorably to Lockhart is chopped brisket, also pork ribs. I suppose the reason chopped is so much better than sliced is that they must use the moist end for chopped?? And pork ribs are excellent, very tender & smoky.
I normally don't use a lot of BBQ sauce, but Bolton's is some of the best I've had. Their's is thicker & hotter than most, with very little sweetness. It's kinda orange/rust color. Very good sauce.
Sides are said to be homemade, but I haven't tried yet. They are located in an old building with a walk-up window, no dine-in facilities. Outdoor tables only, this is primarily a take-out operation. Husband/wife team are very nice, accomadating folks.
I have not tried the pulled pork, just not interested. But recommend chopped beef & pork ribs as being some of the best.

MY REVIEW: Had their 3 meat plate today. I chose to have the ribs, brisket and pulled pork with potato salad and cole slaw. The ribs, pulled pork and cole slaw were EXCELLENT! The potato salad was a little bland for me. Where was the celery, onions, pickles??? The brisket had a good smokey flavor, but was dry. I had no choice but to use the sauce. By the way, their homemade sauces are good too. I especially enjoyed the chipolte sauce. Not too hot, it was just right. The freshly brewed tea was good too! I'll definately be back. I want to try their BIG breakfast burritos next!

MY REVIEW: I've stopped here twice and sampled their brisket and ribs. Both were very good, compares well with Lockhart/Central Tx - B*lack's & S*mitty's Bar-B-que style of smoked meats. Friendly service, portions were big & prices were very reasonable. Worth the trip.
