MY REVIEW: I'm very critical of coffee shops in Houston, and I've really been around and experienced coffee culture in many places in the states and many times in Italy, Austria, France, even places like Croatia, Slovenia and Serbia. You could count on one hand the shops that meet my standards in Houston. Pax is definitely one of them. Their standards are top-notch. Seriously, these guys know what they are doing when it comes to quality. The only problem is ambiance. You wouldn't know that it's a good coffee shop by looking at it. We are so programmed to think of a good coffee shop as being a hip place with soft furniture and a flat screen. But no! It's all about the bean. And these guys do the bean better than anyone else in the Houston area, by my experience. Their teas are awesome too. Not a massive selection but they put lots of effort into finding the best. You will be surprised if you have any taste at all for coffee and tea.
