APPETIZER (Choice of) EGGPLANT MOSAIC Baked layers of eggplant, poblano and red bell peppers, Oaxaca and Cotija cheeses. Served over a tomatillo sauce.
TUNA CEVICHE sashimi slices of ahi tuna, cooked in lime and pineapple juices. Accented with ginger, horseradish, and coconut milk. Topped with finely diced pineapple and a touch of rocoto pepper. Served with plantain chips.
SOUP OR SALAD (Choice of) CREAM OF ELOTE yellow corn bisque garnished with crab meat.
ENSALADA DEL CESAR Grilled heart of romaine gently tossed with a roasted jalapeno and Cotija cheese Cesar dressing. Served with baked croutons on a parmesan tuile.
MAIN COURSE (Choice of) FILETE WELLINGTON Filet mignon wrapped in brioche pastry. Filled with corn huitlacoche and crimini mushrooms duxelles. Served with sauteed broccolini drizzled with a Pisco sauce.
LENGUADO RELLENO Filet of flounder fish stuffed with spinach and tomatoes, wrapped in sliced prosciutto and pan seared. Served with a sauteed vegetable medley drizzled with a chipotle and saffron veloute.
CODORNIZ EN MOLE Grilled quail served over a Poblano Mole. Accompanied with Mexican rice.
