April 9, 2008. Houston. Executive Chef and General Manager Karlo Solyom, is pleased to announce that Fuegovivo Churrascaria, 11681 Westheimer (between Wilcrest and Royal Oaks Club Drive), will be opening on Wednesday, April 23th, with a private reception from 5 PM until 7 PM, benefiting Children's Cancer Hospital at M. “Fuegovivo means ‘roaring fire’ in Portuguese,” stated Solyom, “and our ambience is just as warm and comfortable as if you were curled up in front of a gaucho’s roaring fire.”

The gaucho is comparable to the North American cowboy. Like the North American word ‘cowboy,’ the term ‘gaucho’ often connotes the romanticized view of the 19th century, when gauchos made up the majority of the rural population, herding cows and hunting.

Gaucho's were generally nomads that lived on the ‘pampas,’ the vast plains of southern Brazil. These skilled riders lived off the land and often willingly shared their food with other travelers. They created a unique style of cooking meat, ‘churrasco,’ by digging a pit in the ground and starting an open fire where they roasted large meats on skewers. From these skewers, they would carve thin slices of meat to share with those gathered around the fire. Their meals were often complemented with seasonal vegetables.

“Today at Fuegovivo, we continue the gaucho’s hospitable tradition,” stated Solyom. “Our service is ‘rodizio’ style, and our ‘Gaucho’s or meat carvers, bring to your table an unending parade of beef, pork, lamb, chicken and Brazilian sausage that has been cooked on a skewer over a roaring fire, and is carved directly onto the diners plate.” In addition to the grilled meats, a twenty-foot, two-tiered salad bar is stocked with more than fifty mouthwatering gourmet salads, fresh vegetables, cheeses and curried meats, as well as the hot traditional Brazilian side dishes.

Fuegovivo Churrascaria is open for lunch Monday – Friday, 11 AM – 2 PM, dinner, Monday – Thursday, 5 PM – 10 PM, and dinner on Friday 5 PM – 11PM and Saturday, 4 PM – 11 PM. A brunch is served on Sunday from 11 AM – 3 PM, and dinner is 4 PM – 10 PM.
